The perfect warm drink for fall.
Honey drinks are all the rage, lately. This healthy fall coffee recipe is sweet and creamy and has a little bit of a tropical flavor from the coconut milk. Just picture yourself enjoying it on a cozy balcony overlooking the Gulf of Mexico, or Pacific Coast, or whatever beach makes you feel all snuggly and warm.
In addition to the warm comfort of the drink, you'll also get a dose of healthy fats from the coconut, and antioxidants from the honey. It does the body good.
Honey Coconut Latte Recipe
1 cup brewed coffee or espresso
1 cup coconut milk (light or regular)
1-2 Tbsp Don Victor™ honey
Brew your coffee.
While coffee is brewing, pour coconut milk into a sealable, microwaveable dish (a mason jar is perfect, because the container doesn't need to be sealed during heating). Add honey to milk, seal it up, and shake thoroughly to combine. If it gets frothy, all the better.
Remove the lid and microwave the milk mixture for 30 seconds to a minute, until hot, but not boiling.
When coffee is ready, pour into a mug, leaving room for milk. Pour warm milk mixture over coffee. Use as much or as little as you like.
Garnish with a drizzle of fresh honey and a sprinkle of ground cinnamon for that indulgent coffee shop look.
Note: The milk mixture will be sweeter than you expect, as the sweetness will be diluted by the coffee. Definitely test it out and adjust the honey ratio to find your perfect balance of sweetness and creaminess for your perfect cup. One cup of sweetened milk will probably last you for several lattes, depending on how much you like in each mug. It stores just fine in the fridge. Just re-shake and re-heat it for your next latte.
